      夏季可食用的蔬菜种类很多,可吃什么菜更适宜呢?

      首先是适当多食用一些凉性蔬菜。夏季对人体最重要的影响是暑湿。暑湿侵入人体后会导致毛孔张开,过多出汗,造成气虚,还会引起脾胃功能失调、消化不良。肉类食物食用过多,会使人体质呈酸性,多内热,适当摄入凉性蔬菜有利于生津止渴、除烦解暑、清热泻水、排毒通便。我们常吃的黄瓜、西红柿、芹菜、藕、绿豆芽、空心菜、大白菜、白萝卜、冬瓜、丝瓜、苦瓜、茄子、菠菜、小白菜、油菜、莴笋、苋菜、茭白、紫菜等都属于这一类偏寒凉的蔬菜。因为这些蔬菜偏凉性,在食用时也应注意。久病体弱、身体虚寒者皆不宜多吃偏寒性的蔬菜,以免寒上加寒,对身体造成不利影响。
     

      第二类蔬菜是瓜类蔬菜。夏季正是黄瓜、丝瓜、苦瓜、佛手瓜、南瓜、冬瓜等瓜类蔬菜上市的旺季,它们的含水量高,又兼具高钾低钠的特点,适合夏天人们大量出汗后补充水分及流失的无机盐。特别是苦瓜,它不仅清邪热、解劳乏,还可增加食欲,提神醒脑。瓜类蔬菜可凉拌,可清炒,还可做汤,也可与肉、鱼一起做菜,清脆爽口,别有风味。

      第三类蔬菜是“杀菌”蔬菜。主要是指葱蒜类蔬菜,大蒜、洋葱、韭菜、大葱、香葱、青蒜、蒜苗等,它们含有丰富的植物广谱杀菌素,对各种球菌、杆菌、真菌病毒有杀灭和抑制的作用。
